  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons honey or maple syrup for vegan
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil or canola oil if needed
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
For the Wraps and Filling
  • 1 cup chopped bell peppers mix and match varieties
  • 1/4 cup chopped green onions or chives
  • 1 cup grated carrots or zucchini for low-carb
  • 1 head iceberg or butter lettuce or romaine lettuce
For the Garnish
  • sesame seeds optional
  • fresh cilantro omit if you dislike cilantro

Method
 

Step-by-Step Instructions
  1. Prepare the teriyaki marinade by whisking together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and minced ginger in a medium bowl until the honey is dissolved.
  2. Cook the chicken in a non-stick skillet over medium heat for about 5 minutes until browned and cooked through.
  3. Add the teriyaki marinade to the chicken, stirring and simmering for 10-12 minutes until the sauce thickens.
  4. In the last 3-5 minutes, add chopped bell peppers, green onions, and grated carrots to the chicken.
  5. Let the mixture cool slightly for about 5 minutes before assembling.
  6. Spoon the chicken mixture into crisp lettuce leaves.
  7. Garnish with sesame seeds and fresh cilantro before serving.
