Step-by-Step Instructions
  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add ¼ cup of diced onions and sauté for 2-3 minutes until translucent, then stir in garlic and ginger for additional 2 minutes.
  2. Add 10 ounces of ground chicken, breaking it up with a spatula. Season and cook for 3-4 minutes until golden and cooked through.
  3. In a small bowl, whisk together tamari, Thai sweet red chili sauce, lime juice, and maple syrup. Pour over the chicken with cashews and stir for 2 minutes.
  4. Remove from heat and fold in shredded carrots, scallions, and cilantro.
  5. Separate leaves of butter lettuce and spoon the chicken mixture into each leaf. Serve with optional sesame seeds.
