Step-by-Step Instructions
- Brown the Butter: Melt ½ cup of butter in a medium saucepan over medium heat, stirring until it turns golden brown and nutty, about 5-7 minutes. Allow to cool slightly.
- Whisk Wet Ingredients: In a large bowl, combine cooled brown butter and ¾ cup brown sugar; stir until smooth. Add room temperature eggs, vanilla extract, and brewed coffee; mix well.
- Incorporate Bananas & Sour Cream: Add 400g mashed bananas and ½ cup sour cream to the mixture; whisk until blended and smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together 1¾ cups flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt. Fold dry ingredients into wet ingredients gently.
- Mix in Chocolate Chips: Gently fold in 1 cup of chocolate chips, ensuring even distribution.
- Prepare Muffin Pan: Line a jumbo muffin pan with paper liners; pour batter into cups filling three-quarters full. Sprinkle additional chocolate chips on top if desired.
- Bake: Preheat oven to 375°F (190°C); bake muffins for 30 minutes until golden brown and a toothpick comes out clean. If moist, bake for an extra 2-3 minutes.
- Add Ganache Filling (optional): Allow muffins to cool for 5 minutes, create a cavity in each muffin, and fill with ganache before cooling completely.

Notes
For best results, use very ripe bananas and ensure all ingredients are at room temperature before mixing. Avoid overmixing for fluffy muffins.
