Method

Step-by-Step Instructions
  1. Brown the Butter: Melt ½ cup of butter in a medium saucepan over medium heat, stirring until it turns golden brown and nutty, about 5-7 minutes. Allow to cool slightly.
  2. Whisk Wet Ingredients: In a large bowl, combine cooled brown butter and ¾ cup brown sugar; stir until smooth. Add room temperature eggs, vanilla extract, and brewed coffee; mix well.
  3. Incorporate Bananas & Sour Cream: Add 400g mashed bananas and ½ cup sour cream to the mixture; whisk until blended and smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together 1¾ cups flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt. Fold dry ingredients into wet ingredients gently.
  5. Mix in Chocolate Chips: Gently fold in 1 cup of chocolate chips, ensuring even distribution.
  6. Prepare Muffin Pan: Line a jumbo muffin pan with paper liners; pour batter into cups filling three-quarters full. Sprinkle additional chocolate chips on top if desired.
  7. Bake: Preheat oven to 375°F (190°C); bake muffins for 30 minutes until golden brown and a toothpick comes out clean. If moist, bake for an extra 2-3 minutes.
  8. Add Ganache Filling (optional): Allow muffins to cool for 5 minutes, create a cavity in each muffin, and fill with ganache before cooling completely.
