  • 1 medium Onion or shallots
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Pineapple Pieces or mango/peach

Method
 

Step-by-Step Instructions
  1. Cut boneless, skinless chicken breast into bite-sized pieces. Toss with cornstarch, salt, and pepper. Let sit for 10 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Fry chicken for 5-7 minutes until golden brown.
  3. In the same skillet, sauté sliced onion for 3-4 minutes until translucent.
  4. Add chopped red and yellow bell peppers to the onions. Cook for another 3-4 minutes.
  5. Whisk together ketchup, cider vinegar, brown sugar, soy sauce, ginger, and garlic in a separate bowl.
  6. Pour sauce into skillet with vegetables. Add pineapple and simmer for 2-3 minutes.
  7. Return chicken to the skillet, stir to combine, and simmer for an additional 5-6 minutes.
  8. Serve hot over rice or noodles, garnished with green onions or sesame seeds.
