Preparation
- Wash and thinly slice the English cucumbers, sprinkle with salt, and let sit for 5 minutes to draw out moisture.
- In a large bowl, layer the sliced cucumbers and red onions.
- In a separate bowl, mix mayonnaise and cream cheese until smooth.
- Stir in Sriracha, coconut aminos, rice vinegar, and sesame oil; season with salt and pepper.
- Pour the dressing over the cucumbers and red onions, and gently fold to coat.
- Just before serving, add diced avocado and fold it in gently.
- Serve chilled, optionally garnished with sesame seeds or fresh herbs.
