Ingredients
  

For the Salad
  • 2 medium English Cucumbers Thinly sliced
  • 1 small Red Onion Thinly sliced
  • 2 tablespoons Sesame Seeds Optional
  • 1 tablespoon Furikake Optional
  • 1 medium Avocado Diced, optional
For the Creamy Dressing
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 4 ounces Cream Cheese Can be replaced with vegan cream cheese
  • 1 tablespoon Sriracha Adjust to taste
  • 2 tablespoons Coconut Aminos Can substitute with soy sauce
  • 1 tablespoon Rice Vinegar Can substitute with white wine vinegar
  • 1 tablespoon Sesame Oil Can substitute with olive oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and thinly slice the English cucumbers, sprinkle with salt, and let sit for 5 minutes to draw out moisture.
  2. In a large bowl, layer the sliced cucumbers and red onions.
  3. In a separate bowl, mix mayonnaise and cream cheese until smooth.
  4. Stir in Sriracha, coconut aminos, rice vinegar, and sesame oil; season with salt and pepper.
  5. Pour the dressing over the cucumbers and red onions, and gently fold to coat.
  6. Just before serving, add diced avocado and fold it in gently.
  7. Serve chilled, optionally garnished with sesame seeds or fresh herbs.
