  • 1 can Stewed Tomatoes can substitute with crushed or diced tomatoes
  • 1 can Kidney Beans can swap in pinto or black beans
  • 1 can Pinto Beans can use preferred beans or legumes
  • 1 can Tomato Sauce reducing can lighten richness if desired
  • 2 tablespoons Chili Seasoning could use a homemade blend
  • 1 tablespoon White Vinegar or substitute with apple cider vinegar or lemon juice
For Serving
  • 1 cup Shredded Cheese for topping
  • 1/2 cup Sour Cream for garnish
  • 1/2 cup Diced Onions for freshness
  • 1 bag Tortilla Chips for dipping

Method
 

Preparation Steps
  1. Finely chop the green pepper and any other desired vegetables to enhance flavor and texture.
  2. In a large pot, heat a drizzle of oil over medium heat. Add the lean ground beef and cook until browned, about 7-10 minutes.
  3. Stir in the chopped green pepper and cook for an additional 3-4 minutes until softened.
  4. Add Rotel tomatoes, stewed tomatoes, kidney beans, pinto beans, tomato sauce, and chili seasoning. Mix everything thoroughly and bring to a gentle boil.
  5. Reduce heat to low and simmer uncovered for about 45 minutes, stirring occasionally.
  6. Ladle chili into serving bowls and garnish with shredded cheese, sour cream, and diced onions. Serve with tortilla chips.
