- Mash 3 to 4 very ripe bananas until smooth.
- Combine wet ingredients: eggs, vanilla extract, melted coconut oil, and almond milk with bananas; whisk until smooth.
- In another bowl, mix flour, baking soda, and salt. Create a well in the center.
- Fold the wet mixture into the dry ingredients gently until just combined.
- If using, fold in chopped walnuts gently.
- Pour the batter into the prepared pan and smooth the top.
