Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mash 3 to 4 very ripe bananas until smooth.
  3. Combine wet ingredients: eggs, vanilla extract, melted coconut oil, and almond milk with bananas; whisk until smooth.
  4. In another bowl, mix flour, baking soda, and salt. Create a well in the center.
  5. Fold the wet mixture into the dry ingredients gently until just combined.
  6. If using, fold in chopped walnuts gently.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50–60 minutes, checking for doneness with a toothpick.
  9. Let cool for 10–15 minutes in the pan before transferring to a wire rack.
